Charbroiled Oysters
INGREDIENTS
3 Dozen oysters cleaned and shucked
Stick of butter
Head of garlic finely chopped
½ cup of grated Cotija cheese
Hot Sauce (Siracha or your favorite Louisiana brand)
Salt and Pepper
Lemon
Cilantro coarsely chopped
DIRECTIONS
Get the grill nice and hot.
In a small saucepan melt the butter. Stir in garlic, and hot sauce, salt and pepper to taste. (You’ll lose some heat to the butter and the grilling, so I say get spicy with it). Stir juice of half a lemon. Turn off heat, and stir in almost all the Cotija cheese, reserving some to sprinkle on top.
Spoon the mixture into each oyster cup. Sprinkle more Parmesean on top. Put oysters on the grill and covered for 10-15minutes.
When the shells are a little charred, and the cheese nice and golden brown, you’re oysters are ready.
Top off with spritz of lemon and sprinkle of cilantro. Enjoy with an Abita brew, crisp Rosé, or a glass of Bowmore whiskey which happens to pair excellently with oysters.
